春天的菜~涼拌大頭菜

                       春天,爸爸的菜園裡一定有種大頭菜(結頭菜、芣藍

                                       因為爸爸常常煮大頭菜貢丸湯

                                 爸爸不愛蘿蔔湯和菜心的冷寒他怕冷

                         記得以前隔壁的多娜,常常端一碗排骨蘿蔔湯過來

                                         喊著~阿公,湯給阿公喝….

                      爸爸總是皺起眉頭搖搖頭說:怎麼又是蘿蔔湯啊

                                              他就是不愛喝蘿蔔煮湯

                                          爸爸喜歡吃荷蘭品種的大頭菜

                                                因為比較甜嫩好吃

 

                                      我沒有特別喜歡喝大頭菜煮湯

                                            但是卻愛吃涼拌大頭菜

                          同事很會做涼拌菜尤其是這道涼拌大頭菜

                                          問她食譜我決定試試看

                         貼心的她告訴我,想吃就說一聲她做給我吃啊

 

 

       

 

 

                                                   材料:大頭菜1

                                                   芫荽3

                                                   朝天椒(4顆)

                                                   麻油(1匙)

                                                   糖(2大匙)

                                                   白醋(1杯)

                                                   鹽(2匙)

 

       

       

       

 

 

                                                               作法:

                         大頭菜去皮切薄片,加入鹽巴搓揉後放入容器待出澀水

                                          白醋加糖用小火煮開待涼

                        約需半天時間後,倒掉澀水用水沖洗一遍再用開水濾一遍

                                            將辣椒芫荽切細末備用

                     先將大頭菜片瀝乾多餘水份,加入醋糖水和麻油還有辣椒芫荽

                                   攪拌均勻後放入冰箱醃一夜後入味後即可食用

 

       

 

 

                                                   酸甜辣脆即將喚醒味蕾

                                                  現在還是大頭菜的產季
